Caramel Apple Tutorial

I guess posting about caramel apples on Monday
really did make my mouth water for some.
So I decided to make some for my family
as our Family Night treat.  The kids & Brian
were all excited of course!
Here is my version of caramel apples
1. Wash 10 Granny Smith apples
 2. Dry & Place sticks in center of apples. Then dry.
 3. Melt
1 cup butter
1 cup light corn syrup
1 cup brown sugar
1 cup white sugar
1 (14 oz.) can sweetened condensed milk
dash of salt

Stir constantly with a wooden spoon on meduim heat until all melted & it starts to boil.
Keep at a rolling boil & keep stirring for 15- 20 minutes.
You will know its done & ready when a ball forms in cold water.
The best way to do this is to fill a small glass with cold water, drop in
a little bit of caramel, wait for it to cool- a couple of seconds and then
form it into a ball with your fingers.  You want it to be a firm ball, but
not too hard, or you will have really hard caramel.

* I know it may look tempting, but DO NOT lick the
caramel until AFTER  it has cooled!
When it's ready, move it onto a hot pad by your apples.
Slowly dip & turn the apple in the caramel.
The put on tray of wax paper.
Let cool a couple of minutes. Then, pick up apple,
and wrap caramel on bottom under the apple.
You will have extra caramel left over.  You can dip the
apples again if you want a thicker layer of caramel, or
pour the caramel in a square pan and put in the fridge.
After it's cooled, you can cut it into squares, wrap
it in pieces of wax paper and have fresh pieces of caramel. Yummy!

Now the candy part-
There are not pictures of this because I needed 2 hands!
You can choose any topping you want.
I used::
-white chocolate (the kind for dipping)
-milk chocolate chips
-toffee bits
-peanut butter chocolate chips
-cinnamon & sugar
and oreo is so good too.

With the white chocolate, melt it
and then dip your cooled apple in it just like you
did with the caramel.
You have to work fast with white chocolate because
it hardens really quick.

With the chocolate & peanut butter chips, I melt them
individually.  Put the melted chips in individual ziploc bags,
cut a small corner off and drizzled them all over the apple.
First across and then up and down.

With the toffee & chocolate one, I drizzled the chocolate
all over the apple and then sprinkled toffee bits all over it.

For the cinnamon and sugar one, I dipped it in
white chocolate and then rolled it in a cinnamon & sugar mixture.

And viola- you have a beautiful & yummy caramel apple
Perfect for Fall!
The kids each took one to their teachers.
I asked Jackson what his teacher said & this was his response,
"She said, 'What is the apple for?'
He said, 'Don't you know! It's for you!'"
She told him it was her favorite treat.
Brian thinks I am trying to make my kids the
teacher's pets.  Is there anything wrong with that? ;)
